Last month Chef Alyssa’s Kitchen teamed up with us for a CLT tales giveaway, where the winner chosen won two spreads from Chef Alyssa’s Kitchen. The first spread was a Smoked Chili and Rosemary Mustard spread, and the second is a Champagne-Tomato Jam spread. Both of these delicious spreads represent the style of food Chef Alyssa loves to create: healthy, light, fresh and all-natural.
The winner of this social media giveaway was Giovanna Torres. Part of the CLT tales giveaway guidelines were that the winner cook a dish with the spreads and be featured on CLT tales in a future article.
We followed Giovanna on her culinary journey of making a delightful dish with Chef Alyssa’s Spreads. Here is what our day looked like!
Deciding on a dish to make was quite difficult for Giovanna, since there are so many things you can use these spreads for. When purchasing spreads from Chef Alyssa’s Kitchen, each package comes with a card referencing recommended uses. If you are not ordering this online, this is also available on Chef Alyssa’s website!
Giovanna decided to use both spreads. One of Chef Alyssa’s recommendations is to put the Smoked Chili and Rosemary Mustard spread on to meats, and the Champagne-Tomato Jam spread on to vegetables.
Since these flavors are so different, Giovanna decided to make a large dish, and a small side of vegetables. The large dish would consist of chicken breast marinated in the Smoked Chili and Rosemary Mustard spread over couscous, topped with sauteed vegetables with just a little salt on top.
The second small plate would only consist of vegetables, topped with the Champagne Tomato Jam!
Buying the ingredients
Part of the reason this recipe was chosen was because of how easy the dish would be to make and how affordable the ingredients were. “I think that with such bold flavors in each spread, they will transform even a simple dish like chicken and vegetables into tasting like an extravagant one.”
To Walmart we went! First we stopped off in the produce section to purchase an onion, Roma tomatoes and green peppers. Next, we stopped by the meat section to grab the chicken breast. Giovanna ended up choosing thinly sliced chicken breast to use for this recipe. The Couscous used was the Near East brand in the flavor of Roasted Garlic and Olive Oil.
A few other ingredients that she already had at home were salt, olive oil and Trader Joe’s 21 Salute seasoning.
Preparing the dish
To prepare the dish, Giovanna preheated the oven to 375 degrees to bake the chicken. After greasing the pan with olive oil, she laid down the chicken and began to marinate it. She then used the Smoked Chili and Rosemary Mustard spread as a rub for the chicken breast. Since this particular spread is fairly thick, she mixed in olive oil to make the spread easier to rub onto the chicken.
The chicken was popped in the oven for about 10 minutes and then ready to serve. If you are using normal chicken breasts, you’ll need to bake the chicken until it is fully cooked. With thinly sliced chicken breast, you need much less time for it to cook.
After marinating the chicken, Giovanna cut up all of the vegetables and added them in a large frying pan that was already heating up the olive oil. The veggies were sauteed with a little bit of salt and the famous Trader Joe’s 21 Seasoning Salute seasoning until they were fully cooked. This is an amazing seasoning to pair with almost any dish. It is a really smooth blend of onion, black pepper, celery seed, cayenne pepper, parsley, basil, marjoram, bay leaf, oregano, thyme, savory, rosemary, cumin, mustard, coriander, garlic, carrot, orange peel, tomato, lemon juice and lemon oil.
Once the vegetables were done, they were topped with Chef Alyssa’s Champagne-Tomato Jam spread. Giovanna put the spread on directly after the vegetables were done so that the spread would be warmed.
The side dish
For the side, Near East Couscous was made according to the simple directions on the box. The Roasted Garlic and Olive Oil style Couscous has a lot of great flavoring and can typically be paired with most dinner dishes.
The end result of the chicken, vegetable, and couscous dish made with Chef Alyssa’s Spreads was a complete win! Although the two dishes are pictured separately, they were eaten together, with the small bowls of vegetables with Champagne-Tomato Jam spread both mixed in and put on top as another “side dish”.
So after cooking and spending the day with the CLT tales giveaway, Giovanna Torres, we both agreed that this was a dish we would make again. I went further to ask Giovanna some specific questions about her opinion on how these two spreads worked with her meal!
Do you think the Smoked Chili and Rosemary Mustard spread paired well with chicken? What other meat would you put it on?
G- It paired incredibly well with the chicken, but to be honest, I think the Smoked Chili and Rosemary Mustard spread would pair well with almost anything. (You can say I became a fan of this spread!)
Do you like the way the Champagne-Tomato Jam spread went with the vegetables chosen? Would you try other vegetables next time?
G- This jam really made my veggie mix tasty. I’m not a huge veggie eater, but now I’m thinking on using it on some asparagus next!
Which spread was your favorite out of the two?
G- Both were rich and extremely flavorful, but I have to admit that the Smoked Chili and Rosemary Mustard spread was out of this world.
Were these spreads easy to use?
G- Extremely easy to use, but more importantly, delicious.
